第一次吃这道玉米、肉沫炒辣椒时感到非常惊艷,这是一道云、贵、川地区的家常菜,在玉米成熟的季节,家家桌上都会有它。我的嫂子是重庆人,是她把这道菜带到我们家的餐桌上的。美国的玉米水分和糖分比较大不适合做这道菜。现在中国的超市有卖冷冻煮熟的糯玉米,我通常会用这个代替新鲜的玉米。秋天时,有时候在纽约和新泽西的韩国超市会买到韩国长青农场自种的糯玉米,大家可以留意一下。

I am amazed by the taste when I first time tried Spicy Ground Pork Stir Fry with Corns. This is a common dish from Yunnan, Guizhou, and Sichuan area. It is on every family’s table when it is corn harvesting time. My sister in law is from Chongqing of Sichuan province. She brought this dish to our table. The American corn is too sweet and tender for this dish. The best-fitted corn in the USA is frozen glutinous corn sold in the Chinese or Asian supermarkets. During the fall, sometimes you can find them in H mart. The special corn is produced by Evergreen Farm in New Jersey.

材料 (Ingredients):

两穗冷冻糯玉米 (2 Frozen Glutinous Corn in Comb)

准备1/2 杯猪肉末 (1/2 Cup of Ground Pork, Trader Joe’s)

小葱1大勺 (Green Onion,1 Table Spoon )

姜 1/2茶勺 (Ginger,1/2 Tea Spoon)

两大勺素油近锅里 (Vegetable Oil,2 Table Spoon)

老抽 3 大勺 (Dark Soy Sauce,3 Table Spoon)

1/2 茶勺盐 (Salt,1/2 Tea Spoon)

1/4 茶勺糖(Sugar,1/4 Tea Spoon )

一条牛角辣椒 (1 Large Chili Pepper)

准备 (Prepare):

将两穗冷冻糯玉米解冻,用剥玉米器将玉米粒剥下来 (De-frozen the corn and peel the corn from the comb)

小葱和姜切碎 (Dice green onion and ginger)

一条牛角辣椒去籽和筋,切成丁。(Take out seeds and the white pith)

烹调 (Cooking):

将锅烧热,下两大勺素油进锅里,油热后,将肉末放入翻炒到没有汤汁,加入一大勺老抽上色,马上把肉末盛起来备用;将辣椒下锅煎到辣椒皮微焦,加入玉米粒翻炒,加两大勺老抽,1/2茶勺盐,1/4 茶勺糖翻炒均匀,加入3大勺水,盖上盖子焖到水份将干时(约3分钟),把炒好的肉末放回锅里一起翻炒到汤汁杯玉米和肉末吸收,起锅盛盘。
