珍珠丸子是武汉的一道名菜,这道菜的特点是将糯米裹在肉丸子外面,摆上笼屉蒸煮。蒸好的肉丸糯米颗颗晶莹剔透,让肉丸看上去如同一颗大大的珍珠,故而得名。肉丸子的肉汁和油脂会被糯米吸收,口感软糯,米香和肉香融合味道鲜香非常独特。

材料 (Ingredients)

一杯糯米 ( 1 Cup Sweet Rice)
一根小葱切末 (1 Green Onion)
1/2 茶勺姜末 (1/2 Teaspoon Fresh Ginger)
一大勺生抽 (1 Tablespoon Light Soy Sauce)
1 茶勺盐 (1 Teaspoon Salt)
1/2 茶勺糖 (1/2 Teaspoon Sugar)
1/4 茶勺胡椒粉 (1/4 Teaspoon Pepper)
一杯猪肉末 (1 Cup Ground Pork)
1/3 杯清水 (1/3 Cup Water)

做法

将葱、姜末和酱油、盐、糖和胡椒粉放入肉末中搅拌均匀,再把清水加入继续顺着一个方向搅拌直到肉馅粘稠上劲。

将糯米沥干水分,把肉馅团成2英寸大小的肉丸,在糯米中滚动,让糯米充分裹满肉丸,在蒸笼上铺上白菜叶,糯米肉丸放入,大火蒸煮20分钟,就可起锅了。

Steps

Merge sweet rice into the water for 20 minutes
Mix green onion, ginger, soy sauce, salt, sugar, and white pepper with
ground pork well, add water continue mixing along one direction until
the meat is sticky and tight together.

Drain sweet rice to very dry, make around 2 Inches in size of meatball
with a spoon and rolling the meatball with sweet rice until the meatball
is fully wrapped with sweet rice; put napa cabbage leaf on the bamboo
steamer, add meatball wrapped with sweet rice on the leaf, steam in
strong heat for 20 minutes. It is done.
